At 125 ml this is the smallest siphon we list, which makes it the right tool for small batches: a garnish cream, a single sauce, a dessert component made to order rather than in bulk. Operation is a single button.
Where a 125 ml earns its place
On a tight pass, or anywhere a 250 ml would leave half a charge of cream sitting unused. Plating sections and cocktail stations tend to want several small siphons rather than one large one — a different cream or foam in each, nothing cross-contaminated, nothing wasted at the end of service.
How to use it
Add whipping cream and any sugar or flavouring, thread in one 8 g charger, shake for about thirty seconds and dispense. It takes standard 8 g cartridges directly — no regulator, nothing else to buy. A cylinder will not fit a siphon this size without one.
Looking after it
Strip and wash the head after every service; dried cream in the valve is what kills a siphon. Do not put a pressurised siphon in a dishwasher, and release any remaining gas before opening it.
If you are running higher volume, the 250 ml and 500 ml dispensers are the next steps up.
