The arithmetic that matters
One 8 g charger aerates roughly half a litre of cream. Six hundred is therefore about 300 litres of finished cream, foam or espuma. Against the 240 case the per-charger rate drops noticeably; the pack table above shows exactly what you pay at each tier, with the discount already in the price rather than applied at checkout.
Cartridges at this volume, or a cylinder?
Honestly: at 600 chargers a month you are at the point where a 2 kg tank costs less per charge. Cartridges still win on simplicity — no regulator, no training, nothing to go wrong — and on multi-station sites where each bench wants its own supply. If your volume sits in one place, price both.
