Who buys it. Kitchens that want a second or third siphon rather than a first one. It is a plain catering unit with no features to pay for — plastic body, aluminium head, 0.25 litre maximum — so a section can keep one cream and one foam going at once without emptying either. It runs icings, custard, soft cheese, jelly and soda as readily as whipped cream.

What it takes. One standard 8 g cartridge per fill, threaded straight into the head, with no regulator and nothing else to buy. Cylinders need a regulator and will not thread into a siphon on their own. Wash the head after every service and release the gas before opening it.
