Regulators and accessories. A pressure regulator sits between a cylinder or tank and your whipping siphon, bringing the pressure down to something the siphon can take. Every cylinder from 320 g upwards needs one — only 8 g cartridges thread straight in.

If you are moving up from cartridges to a cylinder for the first time, the regulator is the one-off cost that makes the saving possible: cylinders are far cheaper per charge, but the two are not interchangeable without it.
