What it does. A quarter litre of cream, sugar and any flavouring, one standard 8 g cartridge threaded into the head, about thirty seconds of shaking, and it dispenses by button, so portions stay even across a service. iSi states that cream prepared this way holds in the fridge for up to ten days — that is the manufacturer’s figure, not a test we have run.

Looking after it. Strip and wash the head after every service; dried cream in the valve is what ends a siphon’s life. Release any remaining gas before opening it, and keep a pressurised siphon out of the dishwasher. The rest are in dispensers.
